INTRODUCTION TO CAKE DECORATING         

Level:            Beginner/ Intermediate - 5.5 hours course

Cost:              $135 – includes all materials

New to cake decorating?

Decorating a cake takes more than just creativity and a steady hand. In this 5 1/2 hour intensive class you will decorate your own butter cream cake while picking up tricks of the trade.  In this class students will learn:

  • how to cut cakes to torte them

  • make Swiss Meringue Butter Cream

  • trouble shooting butter cream

  • fill and cover torte flawlessly

  • basic piping borders, rosettes, leaves, and writing.

 Each student will be supplied with their own cake to work on and take home to enjoy with friends and family!

 

 

THE BASICS OF PIPING          

Level:            Beginner – 4.5 hours course

Cost:              $85 – includes all materials

Piping is a foundation of cake decorating.  Whether you are a beginner or just in need of a little help to get to the next level, join us as we use a variety of tips to create versatile and fun borders.  We will also be practicing several flowers; chrysanthemums, daisies, and begonias.

 

 

ALL OCCASION FONDANT CAKES                      

 

Level:            Beginner/Intermediate – 8 hours course

Cost:              $250 – includes all materials

In this class students will be assisted in designing and creating their own 2 tier special occasion display cake following the demos on various techniques. 

Topics include:

  • covering cakes with fondant

  • troubleshooting fondant

  • flowers; ruffle, ribbon, cutter

  • bows; gift box, whimsical, tuxedo

  • accordion ribbon

  • stenciling

 

FONDANT WEDDING CAKES                     

Level:            Intermediate - 2 day course

Cost:              $450 – includes all materials

This class is designed for students wishing to learn how to properly and safely assemble stacked wedding cakes, emphasizing a clean cut and professional finish.  Students will be assembling a 2 tier modern design wedding cake; bottom tier will be a real cake and top will be a display. 

 

Topics include:

  • wrapping bottom tier with buttercream smoothly in preparation for fondant finish

  • adding support structure

  • covering cakes with fondant

  • individual color palette

  • painting with metallic luster colors

  • the use of kitchen pasta attachment for sheeting fondant

  • evenly placing stripes

  • wafer paper flowers

  • safely transporting cakes

  • covering display boards

 

Cookie Flower Pot Cake

Level:            Beginner/ Intermediate – 8 hours course

Cost:              $250 – includes all materials

We start by carving our cakes out into fun pottery, then decorating our flowers with colorful flood icing.  Each flower pot is painted and filled with delicious “dirt”.

 

Students will learn:

  • flood icing

  • basic cake sculpting

  • wrapping cake in fondant

  • painting cakes

  • covering cake boards

 

All materials are supplied; students need to bring only a box to take home their flower pot cake.

 

ANTIQUE GILDED COOKIES

Level:            Beginner/ Intermediate - 6 hours course

Cost:              $125 – includes all materials

This class will show you different methods of decorating cookies to give them an antique and sumptuous look.  We will work with flood icing, fondant, and lots of luster dust!

 

Techniques demonstrated will include:

  • beautiful brushed embroidery

  • hand painting

  • egg cracked finish

 

All materials are supplied; students need to bring only a box to take home their finished cookies.

 

 

CHOCOLATE GANACHE TORTE & CHOCOLATE ROSES

Level:            Beginner/ Intermediate - 5.5 hours course

Cost:              $125 – includes all materials

In this class students will learn:

  • how to slice cakes evenly

  • make Italian Meringue Buttercream

  • fill and cover torte smoothly

  • make chocolate ganache and pour over torte

  • how to make chocolate plastique

  • make beautiful chocolate roses

This beautiful Chocolate Rose will add a new level of elegance to any of your cakes or desserts.  Each student will be supplied with their own cake to work on so at the end of class you will then have not only a delicious but also beautiful torte to take home!

 

 

 

CHOCOLATE GIFT BOX CAKE

Level:            Intermediate – 8 hours course

Cost:              $300 – includes all materials

 

This course will teach you how to impeccably ice a square cake, make white chocolate modeling  chocolate, fun bows, and gorgeous (too beautiful to eat) roses. 

 

You will learn to use a KitchenAid pasta roller attachment to roll out the modeling chocolate and wrap your cake with it.  This exquisite cake can be made for special occasions such as weddings and anniversaries.  The cakes will be provided for you and each student will take home their own finished masterpiece. 

 

Most materials will be supplied - students need only bring a few tools.   Class size is very limited for this class so make your reservation early!

 

 

 

VINTAGE CUPCAKES  

Level:            Beginner/ Intermediate - 6 hours course

Cost:              $160 – includes all materials

 

Vintage is ever so popular right now and it looks beautiful on cupcakes!  Several styles will be demonstrated and each student will recreate their own, taking home 1 dozen of their creations.  All of these can easily be done on full size cakes as well.

We’ll be using:

  • Crimpers
  • Stencils
  • Textured pins
 
All materials are supplied; students need to bring only a box to take home their finished cupcakes.

 

 

CUSTOM INSTRUCTION BEYOND DECORATING

Level:            your level! - different length of class available 

Cost:              varies according to class customization

In addition to decorating interests, many of my students want to learn pastry techniques and baking.  Some are looking for a variety of decorating techniques they see in pictures, getting more proficient at covering square and round cakes, while others need assistance in design and building their own 2 or 3 tier cake creations.  As a professional pastry chef I have taught students in all of these areas.  These private sessions are really built around what YOU would like to learn.

Decorating Classes are held at D and G Occasions store located at  625-G Herndon Avenue, Orlando, FL.

**Classe are kept to a limited size and require a minimum of 3 students to be held.

  

To make a reservation for a class please call me directly.  D & G Occasions does not take payment for classes. 

Please note that tuition is due upon reservation and in advance of class - reservations cannot be held or

guaranteed until tuition is received. 

Tuition if fully refundable if written cancellation notice is given 3 weeks prior to class date. 

Any time after that, tuition is non-refundable and cannot be applied to other class.
